On a cold winter day, you need an easy, delicious soup to warm you right up! This soup is everything you've been looking for! Hearty, comforting, and figure-friendly!

Serves: 12+
Ingredients
2 slices of bacon
2 chopped onions
2 garlic cloves- diced
2 stalks of celery- chopped finely
3 Tbsp. Flour {I used whole wheat flour-it's what I had on hand}
3 lbs. Yukon gold potatoes- diced into chunks
1 head of cauliflower- diced into chunks
2 cups 2% milk {don't substitute milk here- you need the fat}
5 cups chicken broth
8 oz. sharp cheddar cheese- divided {I used 2% cheese here}
Chopped green onions
Salt & pepper to taste
Instructions
Crisp up your bacon in a large pot/dutch oven- rendering out the fat. {Omit this if you're making it vegetarian- just replace with 2 tsp. EVOO}
Remove bacon from pan with slotted spoon & drain on paper towels. DO NOT DISCARD THE FAT!
Add onion, garlic, and celery to pot- stir to coat in bacon fat. Season with a pinch of salt and 2 pinches of pepper. Cook until fragrant & translucent.
Sprinkle flour over vegetables & cook 1-2 minutes until flour has incorporated.
Toss in potatoes & cauliflower and let them get a nice sear on them. {This step isn't necessarily necessary!}
Add chicken broth and milk- bring to a boil. (Be careful not to scald your milk!}
Cover, reduce heat, and simmer until vegetables are fork tender (approx. 15 minutes).
When the vegetables are tender, remove from heat & toss in 5 oz. of sharp cheddar cheese. {Cheese can curdle if added while heat is still on. Be careful!}
Using an immersion or countertop blender, blend your soup. {Be sure and leave a few chunks for texture- no one wants baby food!}
Let stand for 3-5 minutes to thicken. Salt & pepper to taste.
Serve with remaining cheese, crisp bacon crumbles, and green onions for garnish.
